Description
When pressing fruit for sparkling wine, we only use the first 55% to 60% for our signature Pelegrim NV blend. The second cut of juice is around 10% and it’s this juice that was used to produce this cuvée.
Fermented in barrel using indigenous yeast, the wine was left for 10 months before blending and bottling with a small sulphur addition.
